Gary's Fruit Curry

Gary's Fruit Curry

Ingredients

500g Chicken - chopped to strips
3 Shallots - large, chopped to cm x cm squares
2 teaspoons Mustard seeds
1 cube of chicken stock
1 teaspoon Turmeric
2 teaspoons Cumin (Rimsky Kmin)
3 tablespoons of a good curry powder, or two packets of Czech curry powder
1 teaspoon of dried crushed chilli
Half a large pineapple - cubed
1 mango - cut into 3 cm log strips
1 Aubergine - cubed
1 Yellow Pepper - 2 cm x 2 cm squares
Plain flour
Salt
Pepper
Chilli powder
Sesame Seed Oil
Butter
Coconut Milk
150g Dried crushed coconut

Method

* In a bowl, mix the flour with the salt, pepper, and chilli powder, and drop the meat into it.  Toss the meat until it is complete covered with flour.
* Heat the oil with the butter and stir-fry the meat for 5 minutes, remembering to shake off excess flour first. Then remove the meat.
* Fry the shallots with the mustard seeds for 10 minutes.
* Add the fruit, aubergine, yellow pepper, and curry powder.  Stir-fry for 3 minutes.
* Add the meat and the stock cube (crushed).  Then add boiling water until it is just visible under the top layer of the mix.  Stir thoroughly.
* Add the turmeric, cumin and dried chilli to the mix and stir.
* Let it cook for 20 minutes on a low-medium heat.
* Stir in a quarter of a can of coconut milk.  Then add the crushed coconut.  Stir.
* Cook for five more minutes.
* Serve with Pilau rice!
